Compared to whole wheat bread for example, the gluten free versions tend to be much more processed, have less fiber in general, and carry a higher glycemic load. Instead of focusing on what you can’t have, focus on what you can have. How to Cook Brown Rice
- 1 cup Brown Rice (Short grain or long grain)
- 1.5 cups Water
|Combine the water and rice in an uncovered pot and bring to a boil over high heat|
|Turn the heat down to low and place a lid over the pot, let the rice simmer for 20 minutes. Do not stir.|
|Turn off the heat and let rice sit for at least 10 minutes in the covered pot. Feel free to let it sit for 20 minutes while you prepare other parts of your meal, or if you like your rice a little more done.|
